Baked chicken is my go-to easy meal. Sometimes, I just don’t feel like cooking! This is where that go-to meal, baked chicken, comes into play. Eating a real food diet, one where all of our food is simple and unprocessed, can be extremely time-consuming and tiring. I’m always looking for easy and quick meals for when I just don’t feel like cooking. Anyone who works full time and wants to help put good food on the table knows the struggle. In a later post, I’ll share some of my favorite easy foods from a variety of my favorite groceries stores. However, this recipe is simple and the ingredients can be purchased anywhere!
Baked Chicken Thighs
Serves 2-6, depending on size of thighs!
(I make this with chicken thighs because it is nearly impossible to dry them out but breasts might work too)
4-6 chicken thighs (Bone-in or boneless)
grapeseed oil (It has a higher smoke point than olive oil)
seasonings of your choice (This is the fun part! I love trying out different blends from our local tea and spice shop. When in doubt, Lawrys is always a decent choice)
salt and pepper
- Preheat oven to 425F
- Remove skin, if applicable
- Brush all over with grapeseed oil
- Sprinkle liberally with seasonings, salt, and pepper
- Bake on a rack in a roasting pan for 35 minutes (for boneless) – 45 minutes (bone-in) or until your meat thermometer registers a temperature of 180F
- Eat and enjoy the ridiculously easy meal you put together!
This meal makes for AMAZING leftovers, as well!
It’s ok to not always want to be in the kitchen, even when you love to cook. Sometimes, you just need to bake a little chicken and maybe warm up some beans. Or, skip the veggies and just eat a chicken thigh, I’m not going to tell anyone!
